cashew dipping sauce
Makes 1-1/2 cups
1/4 lb Unsalted roasted cashews
1 Tbs Peanut oil
3/4 Cup Plain yogurt
2 Garlic cloves, minced
1 Tbs Fresh lemon juice
1 Tbs Soy sauce
Salt, to taste
1/4 tsp Cayenne pepper (optional)
In a blender or food processor, combine the cashews and peanut oil. Mix until the two form a paste,
periodically scraping down the sides.
Add in the remaining ingredients. Blend until smooth.
Dipping sauce may be made up to 4 days ahead of time if kept chilled and covered. Before serving,
return sauce to room temperature.
